Pickled eggs make a perfect NYE appetizer, if you need a last minute hors d’oeuvre. Quick, pretty and highly customizable, these pickled eggs make a great addition to my hosting repertoire (even though I don’t do that much - maybe 2025 goal?) Even more than that, the pickled egg is a Spencer restaurant classic.
We developed this recipe after falling in love with them at Tandem Cider in Northport Michigan. A large jar on the bar is filled with pickled eggs, served with Tabasco and a few saltines. And while this could sound bleak, somehow this is the perfect simple snack for sitting in an orchard, drinking a cider. While, I don’t get to eat pickled eggs amongst crab apple trees as much as I would like; we have glitzed up this simple snack to compensate.
