This rice pudding is beyond easy. NOT only is it beyond easy, the result is everything I want: a clean creamy flavor, un-muddied by custard or cornstarch pudding. How dare I be so cruel to custard? (I sill love you custard, just not here, not now.) But I truly believe rice pudding is to highlight the RICE, and this recipe does exactly that. I have made this recipe over 100+ times. Having learned it at Delfina in San Francisco, I have taken it with me wherever I go. This is one of my back pocket recipes and I hope it becomes one of yours.
